Healthy Hollywood: Fab Food Friday – Be Spicy On Valentine’s Day!

Give a dash of spice and a pinch of heat to your Valentine this weekend with a home-cooked Mexican brunch. Nothing says ‘I love you’ more than a meal seasoned with love.
“Traditional Mexican ingredients like chiles, chipotles, Mexican chocolate and vanilla, make great items to spice things up,” reveals Food Network’s Marcela Valladolid.

Marcela whips up traditional (and healthy) Mexican meals on her show “Mexican Made Easy.” “I love having an array of different hot sauces and salsas on the table to match my guests’ palates; it’s always fun to see how much heat the group can take!” Also, research shows a spicy dish not only revs up the metabolism, but also the libido. So, why not go Mexican this Valentine’s Day? Muy caliente, indeed!

“Whether you’re looking to impress that special someone or planning on ditching the romance and hanging with the friends you love, a Mexican-style brunch is a great way to spend an afternoon together over great conversation, while enjoying plenty of Mexican food/drink that’s as flavorful as your relationships,” declares Marcela!

Marcela shares with Healthy Hollywood one of her favorite brunch dishes and a recipe for a sultry Cupid’s Kahlua Kiss.

Oven-Roasted Poblano Peppers and Egg Casseroles
Serves 2

Ingredients:
2 tablespoons (1/4 stick) unsalted butter
1/4 cup chopped onion
1/4 cup charred poblano pepper strips
1/2 cup sliced button mushrooms
4 eggs
1/4 cup Monterrey jack cheese, shredded

Preheat oven to 350 F. Melt butter in small-heavy skillet over medium-low heat. Add onion and saute for 5 minutes, or until translucent. Add poblanos and mushrooms and cook until liquid from mushrooms evaporates, about 8 minutes. Season to taste with salt and pepper. Divide poblano-mushroom mixture among two individual oven-proof casserole dishes. Carefully crack two eggs into each one. Bake in middle of oven, until whites are just set, about 12 minutes, for over-easy and 15 minutes for over-medium.

Carefully remove casseroles from oven, sprinkle 2 tablespoons of cheese on each one. Return to oven for 2 more minutes, or until cheese melts. Serve in casserole dishes.

Cupid’s Kahlua Kiss:

Ingredients:
2 parts Kahlúa
4 parts soda water
Ice
Maraschino Cherry

Pour Kahlua into a highball glass filled with ice. Add soda water. Top it with a cherry and serve.
